Ginger Cupcakes with Vanilla-Mint Icing

Valentine’s Day is a great excuse to make cupcakes.  But who needs an excuse?  Making these ginger cupcakes from scratch is a labor of love, and you get a richly flavored, moist and dense cupcake and creamy sweet icing.

We won’t pretend these are good for you, but when you are finished noshing you could always brush your teeth with our Gingermint Propolis and Myrrh fluoride free toothpaste!

This recipe makes about a dozen ginger cupcakes.  For the cupcakes you’ll need::

  • 2 cups flour
  • 1 TBL ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter, melted
  • 3/4 cup sugar
  • 1 cup milk
  • 3 eggs, beaten
  • 1/2 cup crystallized ginger, chopped
  • Preheat the oven to 350 degrees, and line 12 muffin cups with cupcake liners
  • In a medium bowl, mix together the first seven ingredients (through the salt) with a fork or whisk to blend thoroughly
  • In a large bowl, whisk together the melted butter and sugar until well combined.  Add the eggs and milk, whisking until nice and smooth
  • Add the dry mixture to the wet in batches, whisking in about a third at the time, until the mixture is well blended and smooth
  • Fold in the crystallized ginger
  • Pour the batter into the prepared muffin cups, filling each about 3/4 full
  • Place on middle rack in oven, and cook until toothpick inserted near the center of a cupcake comes out clean (about 18 – 20 minutes)
  • Let cupcakes cool in pan on a wire rack for about 5 minutes, then remove from pan. Let the cupcakes cool completely before frosting

For the vanilla-mint icing, you’ll need

  • 1 cup butter, softened
  • 7 cups confectioner’s sugar
  • 1/2 cup milk
  • 1 1/2 tsp vanilla
  • 5 drops pure peppermint extract
  • Using a mixer with paddle attachment, beat the butter in a medium sized bowl
  • Add 6 cups of the sugar, the milk, the vanilla extract, and the peppermint extract, beating until smooth and fluffy.
  • Add remaining sugar if needed, based on your desired consistency
  • Frost the cupcakes using a knife or piping bag
  • Share with the ones you love!
