I love foods that combine a sweet flavor with a bit of heat. I also LOVE fresh figs, and try to snap them up when they are in season. In this recipe, fresh figs bring the sweetness, while a little bit of ginger and mint bring the spicy.

1 cup water
1 ½ T grated fresh ginger
2 T lemon juice
¼ tsp fresh grated lemon zest
3 T honey
1 pint fresh figs, stems removed and diced
Combine the first 5 ingredients in a nonreactive pan
Place the pan over medium low heat, and bring up to the point where it is just starting to bubble
Simmer for 15 minutes
Add the fresh figs, bring the mixture up to a boil, then reduce to a simmer
Simmer for 30 minutes, stirring frequently. Most of the liquid will evaporate giving you a chunky, jam-like consistency.
Let cool to room temperature.
Enjoy! I think this is delicious with crackers and a little goat cheese to balance the sweetness.
